St. Patty's Day recap

Drunken cupcakes were a success!  Although the smell of them the next day made me not want a Guinness for a long, long time.  Sorry for the blurry picture, I might have still been hungover :/


Ingredients:
  • 1 cup (2 sticks) unsalted butter
  • 1 cup lager (such as Blackened Voodoo)
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream

Directions:
1. Preheat oven to 350
2. Melt the butter in a sauce pan, remove from heat and let cool a bit.
3. Mix in the stout and cocoa powder to the butter.

4. Mix the flour, sugar, baking soda and salt in a seperate bowl.
4. Mix the eggs and sour cream in another large bowl.
5. Mix the stout mixture into the egg mixture.
6. Mix the dry ingredients into the wet.
7. Spoon batter into prepared muffin tins.
8. Bake for 15 minutes for regular size or 9 minutes for minis, or until toothpick comes out clean. Cool in pan 10 minutes. Remove to cooling rack to cool completely.

Bailey’s Cream Cheese Frosting
  • 5 ounces cream cheese (room temperature)
  • 1 1/4 cup confectioners sugar, sifted
  • 2 1/2 tablespoons of Bailey’s Irish cream
Using the paddle attachment, beat cream cheese adding sugar gradually. Beat in Bailey’s. Frost cupcakes.
